Front mounted bike racks for travel trailers have a very limited weight capacity so you wouldn't be able to load your e-bikes on the front. Instead you'll have to use a trailer hitch receiver mounted bike rack that is rated for use on travel trailers and has a high enough per bike capacity to handle the weight of your 53lb e-bikes.

Water heaters are pretty easy to swap out but I wouldn't say it's always a plug and play setup just because you'll sometimes run into tanks where the water line connection points are on the opposite side of the tank. The Atwood GC6AA-10E has it's connections on the right side in a vertical pattern, while the # DMC74FR has it points centered on the middle of the tank in a horizontal pattern. You could mount some skid wheels to the frame by your stabilizers to have them hit first and protect the stabilizers and the rest of the undercarriage from scraping when coming out of a steep incline/decline. I recommend ones like the Ultra-Fab Skid Wheels # UF48-979012.
